Recipe 1:
Sauteed Wild Mushrooms with Creamed Herbs

Method

Heat a little oil in a large flat pan

Add chopped shallots and garlic, cook gently without colour for 1 min.

Add white cooking wine and reduce by half

Add mushrooms and cook quickly until they just soften and create a little liquid

Take mushrooms from the pan with a perforated spoon and keep warm

Reduce the cooking liquor, check seasoning and add herbs, simmer for 2 mins

Add cream and take off the boil

Add the mushrooms back to the source, mix well and serve.

300g assorted wild mushrooms

1 large finely chopped shallot

1 clove garlic crushed

25ml cooking oil

20g butter

100ml Gourmet Classic Chardonnay Cooking Wine

1 tblsp mixed fresh herbs chopped (dill, tarragon, chives & parsley)
Double Cream or Créme Fraiche
Black pepper and salt to taste
